Research Findings: High-Power Ultrasound Improves the Quality of Spanish Rosé Wine

A recent study by Spanish researchers concluded that ultrasound improves wine quality by shortening maceration time.

In 2019, The International Organization of Vine and Wine (OIV) approved the use of ultrasound to favor the extraction of grape compounds, its application in obtaining superior quality red wines has been widely studied.

Spanish researchers have turned their attention to rosé, a booming market that has experienced strong growth over the past 15 years. A research team from the University of Castilla-La Mancha, and the University of Murcia in Spain used high-powered ultrasound technology to treat crushed Monastrell grapes, a process known as sonication. They compared the resulting rosé with the wine obtained after a four-hour maceration period.

Professor Encarna Gómez Plaza, from the University of Murcia explained the importance of the research for the wine industry. He stated that “the ultrasonic application was primarily designed to reduce maceration time in red wine vinification. However, experiments with white wines have shown that the aromatic fraction can be increased by sonicating crushed grapes. Therefore, we decided to study the effect of ultrasound on rosé wines, something that had not been done before.”

Prolonged maceration can cause oxidation of certain compounds in the wine, leading to a bitter taste and other undesirable effects.. This is where ultrasounds come in. Ultrasonic sonication causes the cells in the skin of the grape to rupture, allowing the desirable compounds to be extracted in a significantly shorter steeping time, thus reducing the adverse effects of oxidation.

Sensory analysis of the wines by a panel revealed that the ultrasonic rosé had superior aromas

“Sonication resulted in wines with intense aromas of red fruits and flowers, with higher scores than wines from macerated grapes,” the authors note.

Analysis of the chemical composition supported this claim: ultrasonication improved the extraction of several volatile aroma-enhancing compounds, such as terpenes, which can give off a floral or citrus fragrance.

The team hopes that this study will draw attention to the potential of ultrasonic technology to produce high-quality rosé wines. Now they are studying other applications of high-power ultrasound in the wine industry.

OnePoll Survey: Only 17% of Wine Drinkers Consume Wine the Right Way

When ordering a bottle of wine in a restaurant, it’s customary to receive some sort of presentation as well as a “first sniff, swirl, and sip” to make sure it’s to your liking. According to a new survey conducted by OnePoll on behalf of Woodbridge Wines, only 17 % of wine drinkers swirl and sniff the beverage before drinking it.

To obtain the results of this research, researchers polled over 2,000 United States respondents over the age of 21. Researchers found that 67 % of people believe that there are right and wrong ways to drink wine, but only 22 % believe proper wine etiquette greatly enhances their drinking experience.

“Just like everything in life, there are so many old-school, traditional rules in wine culture that people feel like they need to follow—swirling, sniffing, pairing,” says Serena Shrivastava, brand director for Woodbridge Wines. “We encourage everyone to play by their own rules instead and leave any judgement behind.”

Further studies concluded seven out of 10 respondents said they drink wine more than any other type of alcohol during the winter months, and perhaps surprisingly, 62% of men and 50% of women said they would choose wine over beer while watching sports.

European wine scientists to share expertise and knowledge with Australian Wine Research Institute

European wine scientists are set to share their expertise with the Australian Wine Research Institute (AWRI) in Adelaide as part of a major EU funded exchange program.

A consortium of 13 members of the Oenoviti International network of grape and wine research organizations, including the AWRI, has received €874,000 in funding to allow 39 wine researchers from the EU to spend a total of 190 months at industry organizations around the world.

As part of the international exchange program, the AWRI said 11 researchers from France, Portugal and Spain were expected to spend time in Adelaide.

“The program aims to enhance collaborative networks, facilitate knowledge sharing and build personal relationships within the international grape and wine research community, resulting in enduring benefits for the people and organizations involved and for global wine producers,” said Dan Johnson, MD, AWRI.

“Our scientists look forward to sharing their knowledge and learning from the high calibre visiting researchers, he added.
Oenoviti International is a network dedicated to research excellence and education in viticulture and oenology. The network includes more than 55 partners around the world and is coordinated by the University of Bordeaux – Institut des Sciences de la Vigne et du Vin.

Program co-ordinator, professor Pierre-Louis Teissedre, said: “When grape and wine scientists from around the world work together and share their expertise and knowledge, there are positive outcomes for all wine-producing countries.”

Participating countries include: Argentina, Italy, South Africa, Chile, France, Spain, and Australia, will host the placements between 2019 and 2023.
